Introducing bills’ Autumn/Winter Refresh Menu, featuring an enhanced “Schnitzel” and a new “Vegan Curry”!
Hello, this is PR Sunny-chan! As the days grow colder, it’s the perfect season to pull out warm coats and blankets and get cozy.
Perfect for this season, the “bills AUTUMN/WINTER Refresh Menu” began rolling out sequentially at all eight domestic locations starting Thursday, November 25! This menu update brings back popular autumn/winter favorites with enhanced offerings.
The “Schnitzel,” a staple menu item beloved in Australian restaurants and bars, makes its debut as a customizable dish with up to eight variations to choose from. Additionally, the long-loved “Coconut Curry” has been updated with a vegan curry base. Other returning favorites include “Mushroom Spaghetti” and “Chocolate and Miso Sauce,” both featuring abundant Japanese elements that Bill Granger loves!
Today, we would like to introduce some of our recommended menu items.
Buckwheat Bowl, Greek Yoghurt, Avocado, Sprouting Seeds and Harissa – with Poached Egg

This health-conscious salad generously features superfood buckwheat, quinoa, beetroot, avocado, Greek yoghurt, and more—a vibrant dish packed with bills’ signature style. The delightful texture of buckwheat and nuts further enhances the deliciousness of the fresh ingredients. Add the bright red spice paste “harissa” or squeeze some lime to enjoy a variety of flavors.
Shiitake Spaghetti – Mushroom, Shiitake, Miso Ponzu Cream Sauce

Inspired by Japanese-style pasta, this menu item features generous amounts of shiitake and white mushrooms in a rich yet refreshing cream sauce made with sour cream. Seasoned with miso and ponzu, and topped with herbs such as tarragon, this dish showcases Bill’s unique sensibility, fusing Japanese and European elements.

This visually delightful menu item features a bright and beautiful combination of various yellow hues. The risotto highlights the natural sweetness of pumpkin, making it a comforting dish perfect for autumn and winter. The “furikake” made with white sesame and nigella seeds adds a Japanese accent.

Sunny-chan’s favorite popular menu item “Schnitzel” returns as a fun, customizable dish! This menu offers six combinations of meat and sauce to choose from.
Choose from two types of meat—veal and chicken—and three sauces: “Caper Brown Butter” with delightful caper texture, “Tarragon Mustard Mayonnaise” with the perfect balance of Dijon mustard’s spiciness, aioli’s acidity, and tarragon’s subtle bitterness, and “Gremolata,” a mixture of refreshing parsley, lemon acidity, and appetite-stimulating garlic in olive oil. Additionally, two plate menu options are available, so please try each flavor combination!
Chocolate Miso Cremeaux – Raspberry, Lemon Juice, Peanut & Honeycomb

Japanese ingredients even make their way into desserts. Rich chocolate mousse with a hint of white miso’s saltiness is complemented by the light, sweet-tart sauce of fresh lemon and raspberry. Although I keep saying this and it’s starting to lose credibility (laughs), this is also one of Sunny-chan’s favorites. It’s a plate you’ll want to enjoy at the end of a leisurely dinner with engaging conversation.
Peach Pisco – Pisco, Peach Nectar, Grapefruit ¥1,200

A fruity cocktail featuring natural sweetness, combining Peruvian grape distillate “Pisco” with peach and grapefruit. Very easy to drink and reportedly popular among women.
Lemon Tonic Cucumber, Sugar Syrup (Non-Alcoholic) ¥900

Cucumber, an ingredient frequently used in bills’ drinks, is featured in this non-alcoholic cocktail that highlights its refreshing flavor! This crisp drink pairs perfectly with the comforting flavors of the autumn/winter menu. The vibrant green adds a touch of elegance to your table.
