“bills,” the all-day dining brand originating in Sydney, Australia and operated by SUNNY SIDE UP, is temporarily closed at all eight locations in Japan and one location in Hawaii in order to help prevent the spread of COVID-19.

 Japan locations: Monday, April 6, 2020 – Wednesday, May 6, 2020
 Hawaii location: Sunday, March 29, 2020 – Thursday, April 30, 2020

In the meantime, to help you enjoy the taste of bills at home, I would like to share the recipes for “Scrambled Eggs” and “Ricotta Pancakes” that I make regularly!

The restaurant recipes are not publicly available, but they are actually included in restaurateur Bill Granger’s recipe books.

If you are running out of ideas for what to cook, have already watched everything on Netflix, or have been relying entirely on food delivery services, why not try making these together?

Try the popular “Scrambled Eggs Toast,” loved for its simple flavors that let the ingredients shine!

These are the only ingredients you need!

At the restaurant, we use free-range eggs from chickens raised without cages.

Because the chickens are raised in an environment where they can roam freely without being kept in cages, they experience less stress and grow up healthier. From an animal welfare perspective that values the well-being of animals, free-range eggs are also widely supported in Australia.

Here is how to make it!

✓The secret to bills’ fluffy scrambled eggs is heavy cream! It adds a creamy, mellow richness.

✓Resist the urge to touch it for a full 30 seconds!

They are “scrambled” eggs, but the most important point is not to stir them!

Once the eggs begin to set, use a spatula to gently fold them over to shape them.

In fact, when Bill opened the first Sydney location in 1993, the restaurant was so busy that he did not even have time to stir the scrambled eggs—and that is how these fluffy scrambled eggs were born.

Once they are cooked just right, they are ready. Plate them with sourdough toast.

Did you know you can add side toppings to the bills menu?

This time, I added my three favorites on the side: “Roasted Tomatoes,” “Garlic Mushrooms,” and “Avocado”!

The beloved worldwide “Ricotta Pancakes – Fresh Banana Honeycomb Butter”

Here are the ingredients! If you buy ricotta cheese, you can actually make them with ingredients you likely already have at home.

Separate the ingredients into different bowls.

✓The key is a well-whipped meringue!

To avoid losing the texture of the fluffy meringue and fresh ricotta cheese, fold them together gently and carefully.

These ricotta pancakes were created by Bill Granger when the restaurant opened in 1993, and even now—more than 25 years later—they remain a favorite at bills locations around the world.

✓Be careful not to use too much butter!

Too much butter can cause burning, so the key is to use just a small amount and spread it thinly in the pan.

Once both sides are nicely browned and cooked through, they are ready.

You can actually make honeycomb butter at home, too!

✓There is even a story that after Bill created this honeycomb butter, restaurants all over Sydney began adopting it.

Serve with sliced banana and dust with powdered sugar. Drizzle with maple syrup and enjoy.
