Introducing the bills Autumn/Winter 2019 Menu! This season’s theme is “A Mediterranean Journey.”

Just as we thought autumn had finally arrived, the weather has suddenly turned quite chilly. This is the time of year when you want to spend relaxing moments with loved ones over delicious food.
Perfect for this season, the “bills AUTUMN/WINTER 2019 MENU” has been rolling out across all bills locations starting Monday, October 28!
The theme this time is “A Mediterranean Journey”! The “Mediterranean diet” is a major food trend right now, having been named the “Best Diet for 2019” by the American magazine U.S. News.

The Mediterranean diet refers to the traditional cuisines of countries such as France, Spain, Italy, and Greece, as well as North Africa and West Asia, and is registered as a UNESCO Intangible Cultural Heritage.
It is also widely known for its health benefits, incorporating plenty of cheese, olive oil, vegetables, fruits, nuts, and herbs.
For this new bills menu, restaurateur Bill Granger, who travels the world, has created a variety of dishes inspired by the diverse cuisines of the Mediterranean region.
Without further ado, let us introduce our recommended menu items!

Pomegranate <bills HOMEMADE SODA>
Pomegranate ¥920-
A sweet and tart pomegranate soda made with plenty of homemade pomegranate syrup. Pomegranates, native to the Mediterranean coast, are highly nutritious fruits that have long been used in Mediterranean dishes like salads. With its refreshing taste, it pairs perfectly with our food!

Grilled Courgettes and Burrata Cheese – Dill and Green Tomato Oil

A simple appetizer featuring perfectly grilled courgettes that evoke the feeling of autumn and winter, paired with Burrata cheese originating from Puglia in Southern Italy. One bite fills your mouth with the savory aroma of grilled courgettes, sure to whet your appetite.

Roast Romanesco – Spanish Almond Sauce “Ajo Blanco,” Curry Leaf Oil roast romanesco, ajo blanco and curry leaf oil

Roasted romanesco is paired with a sauce based on “Ajo Blanco,” a traditional Spanish cold soup known for its rich almond flavor. The addition of pomegranate adds a touch of visual elegance. Curry leaves fried in olive oil provide a delightful accent to the texture.

Celeriac Risotto – Topped with Chicory and Tarragon Salad

A rich risotto featuring an abundance of refreshing celeriac, a vegetable native to the Mediterranean. The light, fluffy Parmesan cheese topped on the plate adds a fragrant aroma. Some have even said this dish completely changes their impression of celery!

Ribeye Steak – Roast Tomato Butter, served with Fries and Watercress Salad

A classic style featuring tender ribeye steak served with fries and a fresh watercress salad. The “Café de Paris” style butter, given a spicy twist with chili, melts beautifully into the juicy meat. This is a hearty dish perfect for sharing with friends.

Dark Chocolate Sorbet – Blackberry Sauce, Almond Brittle

Made with 70% cacao dark chocolate, bills’ homemade rich sorbet is a healthy, dairy-free vegan recipe. With the delightful textures of almond brittle and crumbs, it is a dessert where you can enjoy a variety of flavors.

Alongside the launch of the Autumn/Winter menu, the “BILL’S HIGH TEA SET”—exclusive to bills Ginza and created by restaurateur Bill Granger after he moved to London—has also been renewed.

『Espresso Panna Cotta』
As bills is an Australian restaurant, Bill created this item to show how much they value coffee. Its appearance, resembling a tiny cappuccino, is quite charming!
『Ruby Chocolate Eclair – Raspberry Cream, Lime Zest』
Bill took a liking to the ruby chocolate popular in Japan and adapted it into an eclair. It is filled with plenty of raspberry cream. Its elegant appearance is perfect for a sophisticated tea time.
『Yorkshire Pudding – Roast Beef, Mushroom, Horseradish』
The traditional British dish “Yorkshire Pudding” became a major trend among young people in the UK when adapted into street food. Incorporating this global trend, we have reimagined it as a mini-sized savory item.
This afternoon tea set is a unique experience found only here, scattered with various elements inspired by Bill’s travels around the world. We hope you enjoy it.
