This time, we will introduce the 2017 AUTUMN & WINTER menu, which has been rolling out at bills locations nationwide from Monday, October 2.
Inspired by food cultures from around the world, Bill Granger has refined these dishes to perfection—and this autumn/winter, the lineup is once again packed with highlights!
First, please take a look at the classic pasta selections.

Rigatoni with tomato, fennel, and zucchini w/ paprika crumb, Parmigiano ¥1,830
A bills original pasta dish defined by its simplicity: “Rigatoni with tomato, fennel, and zucchini.”
This pasta is themed as a “salad-style pasta,” with the sauce placed directly on top rather than tossed through.
The sauce uses extremely simple ingredients such as tomato and fennel, while the crisp paprika crumble with a hint of garlic adds texture and color to the chewy short pasta known as rigatoni. With the rich depth of Parmigiano cheese, it is a vibrant, addictive pasta that is as enjoyable in texture as it is in flavor.

Pumpkin risotto w/ roasted pumpkin, ‘furikake’ seasoning, pickled beets ¥1,830
With vivid yellow and orange tones, this visually striking dish is the “Pumpkin Risotto.”
This risotto lets you enjoy the gentle sweetness of pumpkin as it is, and is made with generous amounts of cream cheese and butter for a mellow richness. When enjoyed with pickled beets, acidity is added to the pumpkin’s sweetness, creating a contrast in flavors—an originality that is uniquely Bill’s.
The accent comes from ‘furikake’ seasoning made with nori and white sesame, and this playful dish—reflecting Bill’s love of Japan—is also perfect for the upcoming Halloween season.

Pan-seared sea bass w/ pomegranate, root vegetable salad, hibiscus syrup ¥2,000
Next is the “Pan-seared Sea Bass,” recommended as a main dish for lunch or dinner.
The pink sauce features hibiscus, and the root vegetable salad on the side includes pomegranate, adding a fruity accent.
A dish that refreshes the often-hearty autumn/winter season and embodies bills’ concept of “Sunny & Happy.” Sea bass is not only low in fat and high in protein, but also well balanced in vitamins and minerals—another welcome point for those seeking a body-friendly, healthy option.

Braised pork belly w/ celeriac purée, parsnip chips, salsa verde ¥2,400
A meat dish is a must as well. This is the “Braised Pork Belly,” also notable for its photogenic presentation.
The juicy pork belly is slowly braised until tender, and paired with a fragrant apple sauce for a refreshing finish. The combination of pork and apple sauce may not be very common in Japan, but in Bill’s hometown of Sydney it is a classic style loved by many.
This dish was created from Bill’s desire for guests to enjoy a casual yet satisfying, hearty menu item.

Dairy-free chocolate pot – cashew nut milk, turmeric crumb ¥1,300
This is the dinner-time-only dessert, the “Dairy-free Chocolate Pot.”
The chocolate pot is made healthier by adding plenty of avocado and cashew nut cream. The tropical, spicy flavors of refreshing coconut yogurt and the bright yellow turmeric crumb further enhance the sweetness of the chocolate. A homemade, guilt-free bills dessert you can enjoy without feeling guilty—as a reward for a day well spent.

Yame Matcha Latte ¥900
Finally, we would like to introduce the hot drink essential for the autumn/winter season: the “Yame Matcha Latte,” which warms you from the core. It is lightly sweetened, yet as it goes down, an elegant matcha aroma fills the mouth.
This menu item—created precisely because Bill loves Japan—uses “Yame tea,” harvested only in certain areas of Fukuoka. Bill himself tasted it and decided to adopt it on the spot, making this a menu item filled with his commitment to quality.
