Ruby chocolate is a new variety following dark, milk, and white chocolate, discovered by the global chocolate manufacturer Barry Callebaut after approximately 80 years.

As the name suggests, it has a beautiful ruby color, yet remarkably, no coloring agents are used. It is a natural chocolate created through special processing techniques that bring out the acidity and color inherent in cacao fruit.

2018: Starting with a launch event at the Belgian Embassy, products using ruby chocolate appeared one after another!

In June 2019, we held a ruby chocolate launch event for food and confectionery industry media at the Belgian Embassy. We shared the story of its creation and heard great expectations from chocolatiers active both domestically and internationally. We were able to attract interest not only from the media but also from many pastry chefs and chocolatiers through media coverage.

As a result of continued PR exposure in coordination with products and sales efforts, “Ruby Chocolate” recorded sales 20 times higher than initially expected during the following year’s Valentine’s season.
