Perfect for this season, the “bills SPRING/SUMMER Refresh Menu” began service at all 8 domestic locations on Thursday, April 1!

This time, to commemorate the release of bills restaurateur Bill Granger’s latest cookbook “Australian Food,” the lineup has been renewed with the return of popular menu items from the past!
This cookbook celebrates the 20th anniversary of Bill Granger’s first cookbook release and features numerous popular menu items that have been loved at bills locations around the world, from bills’ classic menu to favorites throughout the years.

From this latest cookbook, popular spring and summer menu items have returned, including the summer staple “Sweet Corn Fritters,” the healthy “Spaghetti – Kale & Pistachio Pistou” featuring kale, and the vibrant green “Green Risotto.”
Today, we’ll introduce some of the most recommended items from the menu!
Sweet Corn Fritters – Roast Tomato, Bacon, Avocado Salsa

This dish brings back bills’ summer staple menu item. It’s a classic menu that has been loved by bills fans around the world since the opening of the first Sydney, Australia location in 1993. The fritters feature a delightful chunky texture of corn, onion, and paprika, accompanied by avocado salsa that incorporates the ‘Tex Mex’ (Texan and Mexican) American-Mexican style that was popular in the 1990s when the restaurant first opened, further stimulating the appetite!

Spaghetti featuring an original sauce made by adding kale and pistachios to “pistou sauce” made with basil, garlic, and olive oil. Fresh broccolini with a crisp texture and chopped red chili provide a nice accent. Lemon zest, used in various bills menu items, adds a light touch.
Green Risotto – Rocket and Spinach Purée, Topped with Asparagus and Courgette Salad

This menu brings it back as a summer-inspired dish featuring luxurious use of rich mango and refreshingly tart passionfruit! The combination of mango yellow and meringue white is very vibrant, making it a visually enjoyable dish. Among all the bills desserts Sunny-chan has encountered, this ranks among the top favorites.

A refreshing original cocktail featuring the aroma of yuzu and elderflower syrup, along with the fresh flavor of cucumber. You can enjoy the fresh taste unique to premium craft gin “THE BOTANIST,” which has been adopted as bills’ house gin this season. Squeezing the accompanying lemon creates a different flavor profile.
Mandarin Homemade Soda
