bills, the all-day dining restaurant from Sydney, Australia, operated by SUNNY SIDE UP GROUP, celebrates its 30th anniversary in Sydney and 15th anniversary in Japan this year. Thanks to your support, we have grown into a beloved restaurant with 8 locations in Japan and continued love from around the world! 🌴

Now, the “SPRING / SUMMER 2023 MENU” launched on April 26! The theme for this menu change is “Bill Granger’s Summer Memories,” inspired by bills’ restaurateur 🍧
The menu takes you through Bill’s own memories from childhood, featuring summer dishes that evoke a sense of nostalgia. A rich repertoire of dishes has arrived that can be enjoyed by everyone from children to adults, as well as those with diverse dietary lifestyles!
Bill grew up with Asian cuisine on the family table and has a vegetarian mother, so he has been inspired by diverse food cultures and lifestyles from an early age.
This new menu features a distinctive lineup that reflects Bill’s roots, including plates with Asian flavors and plant-based items ☺️ The Korean home-style dish “kimchi” has been arranged into a fresh, summery green color. It can be enjoyed lightly paired with grains based on quinoa and millet 🥣
Additionally, the “snapper,” a staple in Australia, is roasted in butter infused with dulse, a superfood seaweed, creating an oriental dish.
Furthermore, bills’ classic plate “Scrambled Eggs Toast,” praised by The New York Times as “the world’s best egg dish,” now has a vegan version using tofu instead of eggs 🍳 As a restaurant that takes pride in egg dishes, bills has arranged this so that customers who cannot eat eggs can also enjoy it deliciously.

The homemade vegan granola, carefully baked in the kitchen, now comes with a frozen-style flavor option in addition to coconut yogurt! This breakfast bowl features a smoothie made with chilled strawberries, raspberries, banana, and hemp milk—perfect for the upcoming hot season 🥣

A vegan menu has joined bills’ popular open sandwiches. Silken tofu gently scrambled like eggs pairs perfectly with sambal, a chili sauce staple in Malaysia and Singapore. A new breakfast menu has arrived at bills, where egg dishes essential to Australian breakfast are signature items 🌅

Bill has been exposed to various Asian cuisines since childhood. He was particularly captivated by kimchi, a traditional Korean dish encountered during his travels around the world, and has created a green version to complement bills’ fresh cuisine. A health-conscious dish featuring grains based on quinoa and millet, topped with fresh avocado.

Bill has loved chicken dishes since childhood, saying “chicken schnitzel was my absolute favorite.” This season’s menu features a chicken salad inspired by Southeast Asia. A green salad abundant with coriander, topped with chicken marinated in holy basil and curry paste, finished with nuoc cham, a Vietnamese staple sauce—an ethnic and hearty salad 🥗

Summer crudités featuring colorful, summery raw vegetables such as yellow beets, red and white radishes, and Italian chicory, served with a dip based on tahini from the Middle East ☀️ As an accent to the sauce, sansho pepper inspired by Japanese food culture has been chosen.

“Courgette Chips,” long beloved as a classic plate at the UK version of bills, Granger Co., now starts at bills Japan 🥒 A simple plate of thinly sliced courgette soaked in milk and fried until crispy. Served with an original sauce mixing Greek yogurt, preserved lemon, olive oil, and garlic. A dish you’ll want to pair with beer 🍻

Mussels and Tomato Tagliatelle – Oregano, Basil, Chili

“Neapolitan” Ice Cream Slice – Sour Cherry Pistachio Dark Chocolate

“Neapolitan ice cream,” a summer sweet hugely popular with children in the UK and Australia. The dessert of three-colored ice cream—vanilla, chocolate, and strawberry—served in a cone, arranged bills-style 🍓 Toasted pistachios are used in the vanilla, sour cherry replaces strawberry, and deep cocoa powder is chosen for the chocolate. At bills, enjoy it elegantly sliced like a cake 🍴

The highly popular high tea set has also been updated to a summer version. Sweets include “Summer Pudding,” a traditional British dessert beloved by children across generations as a classic summer treat ☕️

A summer frappé blending sorbet made from coconut milk with jasmine tea and lime juice. The refreshing, gentle sweetness is perfect for the upcoming sweaty season. Other offerings include “Pineapple Melon Frappé ¥1,200” and “Passion Fruit Soda ¥900” using a whole passion fruit—tropical drinks packed with southern fruits.
Mango Mojito – Rum, Mango, Pink Peppercorn, Mint, Lime | VEGAN

The “Mango Mojito,” reminiscent of a resort vacation, is garnished with pink pepper for accent. Other new cocktails include “Skinny Colada ¥1,200,” a summer classic piña colada made with coconut water instead of coconut milk, and a non-alcoholic version of the Cuban short cocktail daiquiri. A drink perfect for summer with ginger and lime.
