The cold winter has passed, and the air has suddenly become warm. Spring has arrived once again this year 🌸
Operated by SUNNY SIDE UP GROUP, the Sydney-born all-day dining establishment “bills” is loved by customers worldwide and celebrates its 15th anniversary in Japan this March 🥑
In recent years, due to the impact of the COVID-19 pandemic, there were periods when it was difficult for international guests to visit. However, with the relaxation of entry restrictions late last year, they have gradually begun to return!
With the desire for even more international guests to experience the charm of bills—which can be enjoyed at any time from breakfast to dinner—a tasting event for the inbound press was held, featuring a collection of menus popular with overseas customers.

The lineup included classic dishes loved at bills for many years, as well as bills’ signature vegan, vegetarian, and pescatarian options 🍽️
Now, let us introduce the menu items actually served at the tasting event in detail!
GRAINS
Homemade Vegan Granola – with coconut yoghurt and fruit compote

This dish features homemade granola carefully baked in the restaurant’s kitchen, served with refreshing coconut yoghurt and fresh cherry fruit compote. The granola, baked with large chunks of caramelized nuts, has a crunchy texture and provides a satisfying sense of fullness. It is a signature bills breakfast loved by many 🥣
BAKERY
Avocado Toast – with fresh coriander and lime

A bills classic that has been loved worldwide since the opening of the first bills location in 1993. While avocado toast is a global food trend, international publications such as The New York Times have reported that bills was the first in the world to serve it.
This bills classic features flavorful sourdough toast topped with a whole fresh avocado and plenty of coriander. Squeezing lime over it enhances the creaminess of the avocado with a fresh aroma, making it a healthy plate that feels like eating a salad.
BOWLS
Breakfast Rice Bowl – fried egg, homemade furikake seasoning, plum tamarind chutney

A perfect morning plate featuring brown rice topped with fresh vegetables and homemade furikake. Breaking the eye-catching sunny-side-up yolk spreads a mellow flavor across the entire plate. The bright red chutney made from plum tamarind adds an accent to the taste. Additionally, eating it with the accompanying cucumber and yellow beet pickles offers a different flavor profile.
SALADS
Celeriac and Ginger Fritters – buckwheat, butter bean purée, beetroot, harissa

Celeriac and ginger are transformed into crispy fritters with the addition of spices such as turmeric, coriander, and cumin. Combined with a buckwheat and quinoa salad, smooth cream-free butter bean purée, and fresh beets, this vegan salad offers a warm autumn/winter feel. Dipping the fritters in the accompanying harissa spreads a spicy flavor that complements them perfectly.
DRINKS
Yame Matcha Latte ¥900

This drink, which is not too sweet and allows you to fully appreciate the taste of matcha itself, uses “Yamecha,” which can only be harvested in certain areas of Fukuoka. It is one of the items that reflects Bill’s personal commitment; he tasted it himself and decided to adopt it on the spot. (Sunny-chan always orders this when visiting bills!)
Furthermore, we were among the first to try the “Cherry Blossom Gin/Soda” served at “Hanami at bills,” where guests can enjoy cherry blossom viewing at all eight domestic locations while sipping cherry-themed drinks 🍷🌸. Please try this special drink created by bills restaurateur Bill Granger to welcome the Japanese cherry blossom season.

A sweet-and-sour, refreshing soda made with homemade syrup of cherry, plum, and thyme, combined with lemon juice and carbonated water. The vibrant red color adds a touch of elegance to the table.
Cherry Blossom Gin
Cherry Blossom Gin ¥1,200 (tax included)
An original cocktail made with homemade syrup of cherry, plum, and thyme, combined with bills’ house gin “The Botanist” and “Toyo Bijin” sake from the Sumikawa Sake Brewery in Yamaguchi Prefecture. It is perfect for dinner.
For this second edition of the event, the volume of cherry blossoms has been increased compared to last year, transforming the interior into an even more gorgeous and spring-like hanami venue. We hope you enjoy your meal alongside the beautiful cherry blossoms during this season of meetings and partings, and savor a precious, memorable moment.

On the day Sunny-chan visited for the tasting, “bills Ginza” had a lively atmosphere with international guests from the morning. As bright sunlight streamed through the large windows, a relaxing time passed with food and drinks that incorporated bills’ signature fresh and multinational essence.
