Introducing the full bills Spring/Summer 2019 menu lineup! This season’s theme is “health-conscious Asian cuisine”!

Spring weather has finally arrived, and the cherry blossom season is already coming to an end—did you have the chance to enjoy hanami?
Along with the warmer season, the “bills SPRING/SUMMER 2019 MENU” has been launching sequentially at bills locations from Monday, April 8!
This season’s theme is “health-conscious Asian cuisine.”

Since opening, bills’ signature “health-conscious” style has continued to draw attention on the global food scene, alongside dishes featuring nutrient-rich grains and vegetables such as superfoods.
Against this global backdrop, bills—known for its health-focused cuisine—presents an even more elevated lineup that you can enjoy!
The menu also incorporates this year’s food trend, “Pacific Rim flavors” (= Pacific Rim cuisine), finishing dishes with sauces and spices popular in Pacific Rim countries such as Thailand and Vietnam, as well as the Middle East and Asia, in a light and fresh bills style.
Foods and drinks featuring fresh fish and tropical fruits—essential to “Pacific Rim flavors”—also make an appearance.
Now, let us introduce this spring/summer menu!

bills HOMEMADE SODAS
Strawberry Basil

A refreshing drink made with house-made strawberry syrup topped up with soda and plenty of fresh basil. It is rich yet crisp, and you may find yourself finishing it in no time…! I was surprised at how well the basil pairs with the strawberry.

Snapper Crudo – Avocado, Dill and Green Tomato Oil

A fish-based appetizer that is essential to Pacific Rim cuisine. This dish was created with Japanese diners—who enjoy fresh fish dishes—in mind. The avocado sauce, marinated with dill and green tomato oil, further enhances the fresh sea bream. Simple and making the most of the ingredients’ flavors, it is a very bills-style dish.

Breakfast Salad, Lemon Dressing
– Millet and quinoa salad with avocado and corn, served with a poached egg

A fun dish to eat by breaking up a little of each ingredient with its different textures. The vibrant appearance evokes the fresh, breezy season ahead. This vegetarian breakfast salad, made generously with highly nutritious ingredients such as quinoa and millet, is truly health-conscious. With plenty of volume and nutrition, it is a dish you will want to share with everyone.

Steak Open Sandwich – Spicy Roast Red Chili and Paprika Sauce
“Muhammara,” Pickled Red Onion, Coriander

What further elevates the tender, juicy steak is “muhammara,” a popular dipping sauce in the Middle East and Asia. Made by blending roasted red peppers and red chilies with nuts, olive oil, and more into a paste, its nutty aroma adds depth and richness to the dish. Generous coriander and pickled red onion toppings add a fresh finish.

Crispy Seared Salmon
– Served with Aonori and Tofu Purée, and Tiger Salad with Green Chili and Broccoli

Paired with creamy salmon that is crisp on the outside and fluffy inside is tiger salad (laohucai), rooted in Chinese home cooking. The sharp kick of green chili adds an accent. Its savory aroma and crunchy texture further whet the appetite. If you dip the salmon into the healthy tofu purée sauce underneath, you can enjoy a different combination as well!

Mango Passion Fruit Frappe

A fruity frappe with a thick, pulpy texture. The flavor of passion fruit—also gaining attention as a Pacific Rim flavor—spreads through your mouth at once, evoking summer. It is very healthy, as it uses agave syrup instead of sugar. The vivid yellow is beautiful, making it a dish you can enjoy with your eyes as well!
