bills, operated by SUNNY SIDE UP, is offering a “25th Anniversary Special Menu” for a limited period of one month starting November 1!

Founded in Sydney, Australia, in 1993, bills celebrates its 25th anniversary this year. It has grown into a global brand with locations in five countries: Australia, the United Kingdom, Japan, South Korea, and the United States (Hawaii). This special menu features modern reinterpretations of items from the very first Sydney restaurant and other historical favorites. We are excited to introduce these exquisite dishes, now available at all locations worldwide!

Potato and Feta Rösti, Sour Cream w/ Gravlax Salmon and Poached Egg (BREAKFAST)

This dish was featured on the breakfast menu of the very first bills location. The “rösti” is a Swiss national dish of pan-fried, crispy potatoes, which pairs perfectly with the feta cheese inside. It is even more delicious when enjoyed with the poached egg, sour cream, and perfectly salted gravlax salmon. A squeeze of fresh lemon adds a refreshing acidity to the mellow potatoes and cheese. With a variety of flavors to enjoy on a single plate, it is the perfect breakfast choice.

Seared Tuna, Green Tea Nori Seasoning w/ Soba and Zucchini Salad (LUNCH)

Fresh seared tuna is coated in matcha and green laver, served with a refreshing soba and zucchini salad. It truly feels like enjoying authentic Japanese cuisine! The bright seasoning of ponzu, mirin, and lemon stimulates the appetite, while various aromas such as shiso, sesame oil, and nori unfold with every bite. This dish fully utilizes Japanese ingredients.

While bills’ cuisine often leaves an impression of skillfully using acidity to enhance the quality of ingredients, I felt this dish was a prime example. Incorporating ingredients and seasonings familiar to Japanese palates, it is a deeply comforting menu item.

Veal Schnitzel, Garlic Mashed Potatoes w/ Watercress Salad and Anchovy Dressing (DINNER)

This is an arrangement of a popular menu item from the early days of the restaurant. It is a luxurious dish featuring juicy veal schnitzel served with garlic mashed potatoes. The anchovy sauce provides a sharp accent that complements the meat, and a squeeze of lemon adds a refreshing finish. As it is a generous plate, it is perfect for sharing with friends and family.

Scorched Meringue, Raspberry and Mango Semifreddo (SWEETS)

This dessert is inspired by summer in Sydney. The moment it was served, the fluffy meringue caught my eye—its visual impact was enough to make me exclaim how delightful it looked! Inside is mango ice cream, where the sweetness of the meringue is balanced by the refreshing flavors of mango and tangy raspberry sauce. Even after a full meal, it was easy to finish. The peanut brittle at the bottom provides a wonderful texture and is absolutely delicious.
