As you step inside, what immediately catches your eye is an open dining room filled with soft daylight streaming in through floor-to-ceiling glass windows.
The answer Bill arrived at for the “bills” × Ginza store concept was a “jewelry box.” It not only presents an image unlike anything seen at previous “bills” locations—colorful jewels in sapphire, gold, and emerald tones sparkling in daylight and evening lighting—but also condenses the inspiration and essence drawn from Tokyo’s Ginza, one of the world’s most sophisticated districts, about which he commented, “I have expectations and excitement unlike ever before” for the Ginza opening.

In contrast to the high-ceilinged, open dining room, the private rooms intentionally feature lower ceilings to create a relaxing space just for you.

It consists of 11 items in total: three open sandwiches, six sweets, plus scones and a mini size of bills’ signature ricotta pancakes. It is served on a custom-made silver stand ordered from London, where Bill lives, and is paired with plates from the Italian ceramics maker “Richard Ginori (RICHARD GINORI),” reflecting the venue’s attention to detail.
And for dinner, a Ginza-exclusive menu that completely overturns the image of “bills.” The Ginza-exclusive “Prime Fillet Steak” is made with high-grade Australian beef raised on long-term grain feeding, pairing a classic steak with the Ginza vibe and finishing it in a healthier style with fresh vegetables.
