Introducing the bills 2018 Spring/Summer menu! This season’s main theme is “Maghreb Flavors”!

Today, we would like to introduce the bills 2018 Spring/Summer menu, which will launch sequentially at each location starting Monday, April 9.
The main theme for this season is “Maghreb Flavors,” but are you familiar with the term Maghreb?

The main theme is “Maghreb Flavors”
Maghreb is a collective term for the Mediterranean coastal regions including Morocco, Algeria, and Tunisia. Influenced heavily by European culture, it is an area where a diverse culinary culture has flourished.
The key ingredients are Harissa, a paste-like condiment made from chili peppers, and Dukkah, a nutty condiment seasoned with various spices.
With Bill Granger’s unique arrangements added to these elements, the menu is filled with a new charm for bills that has never been seen before.
Now, let’s take a look!

Carrot salad w/ green harissa, lemon yogurt, coriander, and dukkah ¥950 (plus tax)
A simple, visually vibrant salad featuring carrots as the main ingredient.
I expected a flavor with a prominent sweetness like a carrot râpé, but the moment I took a bite, the exotic spice flavors created by this season’s main themes, “Harissa” and “Dukkah,” spread through my mouth. It was a dish where the spices perfectly balanced the sweetness of the carrots.
The spices and texture of the dukkah match the sweetness of the carrots so well that I couldn’t stop eating!

Grilled vegetables cannellini bean braise w/ sourdough crumbs ¥1,850 (plus tax)
A gentle tomato-based soup that can be enjoyed by vegetarians.
The savory kailan on top complements the gentleness of the soup, which features cannellini beans infused with tomato flavor. It warmed my heart and soul from the very first sip.
The bills menu is full of items where you can enjoy not just the taste, but also the textures and aromas. I highly recommend savoring the savory grilled aroma that spreads the moment you take a bite.

Roasted snapper, green sauce w/ buckwheat, tabbouleh, and red onion salad ¥2,400 (plus tax)
A refreshing main dish perfect for spring and summer, featuring tender and juicy roasted snapper accented by tabbouleh and refreshing vegetables like cilantro and onion.
Tabbouleh is a popular parsley-based salad in the Middle East. While it is typically made with couscous or bulgur wheat, this version is an original tabbouleh using Bill’s favorites: buckwheat and quinoa.
The pomegranate seeds inside were excellent! The popping texture in the mouth provided a great accent to the tender roasted snapper, and the simple sweetness of the pomegranate balanced the overall flavor of the dish.

Grilled chicken burger w/ green harissa, tahini yogurt, kohlrabi mint slaw ¥2,100 (plus tax)
A new addition to the bills burger series! (This item is available for LUNCH only.)
This “Maghreb Flavor” burger features spiced chicken with homemade harissa and dukkah. While the spices are prominent, the yogurt makes the flavor mild. A nice touch was being able to add the side of homemade dukkah as a topping to your liking.
It looks quite substantial, but the spices really whet the appetite, making it a highly recommended dish for the coming season!
Ginza Exclusive / DINNER

Roasted duck breast, cherry sauce w/ roasted beets and green vegetables ¥3,200 (plus tax)
This is a special menu item exclusive to bills Ginza and available only during dinner hours.
This dish pairs duck with cherries, using the fruity sweetness of the cherries to give the duck a bolder, more wild flavor profile. The bitterness of the spring vegetables and the two types of beets complemented the duck perfectly. Furthermore, the Japanese-style sauce using ponzu and mirin was an excellent match!
The two types of beets (candy beets and golden beets) each have different flavors and sweetness, allowing you to enjoy a variety of tastes on a single plate.
bills Fukuoka Exclusive

bills Eton Mess – berries, raspberry meringue, and mascarpone cream ¥1,000 (plus tax)
This is a menu item exclusive to bills Fukuoka.
The strawberries used are “Hakata Amaou,” a fruit Fukuoka is world-renowned for. (*Subject to change depending on the season)
The meringue that melts in your mouth and the mascarpone cream that mellows the acidity of the strawberries and raspberries are a perfect match!
We recommend crushing the meringue and mixing it with the berry sauce and mascarpone cream to eat it as a “Mess.”
This sweet is a delight for both the eyes and the palate—I couldn’t help but exclaim “How cute!” the moment it was brought to the table.
