Did bills Start the ‘Avocado Toast’ Craze, Now a Breakfast Staple for Global Celebrities?! Introducing Our Recommended Brunch Menu!

The intense summer heat has subsided, and the pleasant autumn season is finally here. Whether it is the autumn of appetite or the autumn of reading, this is my favorite season because it makes it easier to stay active and get things moving (^^).
Now, let’s talk about bills, which is operated by SUNNY SIDE UP!
Currently, “Avocado Toast” is attracting significant attention as a staple breakfast among global celebrities and models. Did you know that bills was actually the first in the world to put Avocado Toast on its menu!?
Avocado toast is like a national dish widely enjoyed in Australian households. The New York Times and The Washington Post have reported that it originated in 1993 when it was served at the first bills location in Sydney. In fact, Bill Granger, the creator of bills, is known in Australia as “the person who spread avocado toast to the world”!
This year marks the 10th anniversary since SUNNY SIDE UP acquired the license for bills and opened the first Japanese location in Shichirigahama in 2008. Although Sunny-chan has introduced many bills menu items created by Bill, I actually did not know this fact…! (> )
In Japan, many people likely have a strong impression of the “Ricotta Pancakes” that sparked the pancake boom, but bills still has so many charms yet to be shared!! With that in mind, I would like to introduce some recommended menu items for enjoying brunch at bills, focusing on the Avocado Toast!
Avocado, lime, and coriander open sandwich
I topped the avocado toast with a side of poached eggs!
This dish offers a fresh and simple flavor, featuring plenty of fresh avocado and coriander on sourdough toast, sprinkled with squeezed lime and chili flakes. The creaminess of the avocado and the refreshing aroma of the lime and coriander are perfectly balanced.
The green gradation of the entire plate catches the eye the moment it is brought to the table. You can truly feel Bill’s unique commitment to ensuring guests enjoy the dish not only for its taste but also for its appearance! When you break the poached egg in the center, the yolk flows out, making the plate even more vibrant (*^_^*).
Since avocado is said to be the “world’s most nutritious fruit,” it is perfect for both breakfast and lunch!
Furthermore, the variety of side menu toppings is a wonderful feature! I also recommend creating your own unique avocado toast by adding toppings such as house-cured gravadlax or halloumi cheese!
House-made granola w/ coconut yogurt and fruit compote
Above all, I really want you to try the house-made granola at bills! (That is how much I recommend it!)
The crunchy texture and fragrant flavor of the granola pair perfectly with the mildly acidic coconut yogurt and raspberry fruit compote, making it easy to eat as much as you like. It has become Sunny-chan’s new favorite menu item!
Almond chia pot w/ pomegranate, berries, and coconut yogurt
This is another dish that women are sure to love!
It is topped luxuriously with fresh pomegranate and berries, giving it a gorgeous appearance! When viewed from the side, you can see the beautiful layers, making it a delight for the eyes as well.
Additionally, it features a very fresh combination of chia seeds—now a representative superfood—soaked in house-made almond milk! It is truly wonderful to be able to enjoy something sweet and healthy without worrying about calories!
Sunrise drink – berry, banana, apple, orange, and yogurt
I would also like to introduce a drink that can be enjoyed with your meal! This is one of Sunny-chan’s favorite drinks, perfect for when you want to recharge your vitamins in the morning! The mellow taste of banana and yogurt combines with the refreshing acidity of berries, apple, and orange, making it very easy to drink. The bright pink color adds a splash of color to the table, doesn’t it? ^^
It paired perfectly with simple dishes like avocado toast that bring out the natural flavors of the ingredients.
Classic Bellini
If you are having brunch on a day off, I also recommend a cocktail!
The Classic Bellini, with its fragrant aroma of fruity white peach, is the perfect cocktail for brunch! It is not too sweet, so it complements any dish. The lovely peach color makes you feel happy just by looking at it, making the meal an even more enjoyable experience.
