The ‘SPRING/SUMMER 2022 Refresh Menu’ begins service on Tuesday, April 19! This menu change features a lineup of dishes that evoke the summer atmosphere of Sydney. While international travel remains challenging, bills offers a menu that makes you feel as though you’ve visited Sydney in summer.
The lineup includes the “Bondi Salad Bowl,” inspired by Sydney’s popular Bondi Beach; the “Sweetcorn Fritters,” a dish beloved for years at bills in Australia; and “Tuna and Avocado Poke,” Bill Granger’s healthy Sydney-style take on Hawaiian ahi poke—all dishes that evoke summer in Sydney. Just looking at them is exciting.
For desserts and drinks, there’s the “Pavlova,” a traditional Australian baked treat topped with mango and passion fruit—classic Australian summer fruits—as well as the vibrant, summery “Passion Fruit Caipiroska” cocktail.Let’s introduce each item!
