bills, the all-day dining concept from Sydney, Australia, operated by SUNNY SIDE UP GROUP, has launched its “AUTUMN/WINTER 2024 MENU” at all eight locations across Japan.

Through its biannual menu changes, bills consistently offers new comfort food and lifestyle experiences. This season’s theme is “Borderless Winter Table.” 🧶

The lineup features borderless and heartwarming home-style dishes from around the world that can be enjoyed by a wide range of guests, including vegan, vegetarian, and gluten-free options. 🥘

◾️ This Season’s Theme: “Borderless Winter Table”!

The Autumn/Winter 2024 menu includes dishes designed for borderless dining, such as “Broccolini and Cavolo Nero Rigatoni” featuring the currently trending vegan pasta, and the “Vegan Oat Milk Matcha Frappé,” a vegan-friendly treat made with oat milk.

Furthermore, the menu offers unique arrangements of beloved home-style dishes from various countries. Guests can enjoy the “comfort” of being in their own living room alongside the “deliciousness” that can only be experienced at bills.

Today, we went behind the scenes at a media tasting held ahead of the new menu launch. Let’s introduce the highlight items right away.

◾️ Broccolini and Cavolo Nero Rigatoni

Vegan pasta, which is becoming a global trend particularly in the UK, has arrived at bills!

Based on rigatoni, a tube-shaped short pasta, this dish is a vibrant green creation featuring cavolo nero (a cabbage native to Tuscany, Italy), parsley, basil, and lemon. 🍴

Toppings of ricotta and parmesan add a creamy flavor profile. For a vegan option, the ricotta and parmesan can be substituted with “nutritional yeast,” a yeast fermented with molasses from sugarcane and other sources. ◎

◾️ Slow Braised Cannellini Beans and Tomato

A morning soup featuring plenty of cannellini beans, a staple in Australian and British households, is now available at bills!

This bean soup is made by simmering tomatoes, herbs, and garlic, then adding homemade parsley dressing and homemade seed croutons. It is finished with lemon zest for a refreshing aftertaste.

This heartwarming soup is perfect for the upcoming chilly season. It is packed with ingredients and is sure to satisfy both body and soul. 🍲

◾️ Hojicha Porridge

We highly recommend the Hojicha Porridge for your morning visit. Porridge is a classic winter breakfast staple in Australia and other countries abroad.

At bills, we have added a Japan-inspired twist by using hojicha (roasted green tea). It includes superfoods such as quinoa, millet, and oats, and is topped with pistachios and pears poached in a ginger base.

While the combination of hojicha and pear may seem unusual at first, they match perfectly. The gentle aroma of hojicha is sure to provide a great start to your day. 🌾

◾️ Grilled Flatbread

Flatbread is a dish frequently customized and made at home abroad. At bills, our homemade flatbread is topped with a “fermented pumpkin” paste made from chickpeas and pumpkin fermented in brine for about a week, allowing you to enjoy the flavors of autumn and winter. 🎃

It is very satisfying and is also recommended to be enjoyed with a craft beer.

◾️ Stracciatella, Chicory and Fennel Salad, Caper and Mint

A salad where you can enjoy the marriage of the mellow flavor of rich stracciatella cheese and refreshing herbs.

Seasoned with a homemade citrus dressing, olive oil, and lemon, you can directly taste the deliciousness of the ingredients. We also recommend pairing it with our gluten-free “Homemade Paleo Bread.”

◾️ New Menu Items Using House Saké!

At bills, we value delivering fresh and healthy options to every guest, which is why we prioritize our relationships with suppliers. As part of this, since last year, we have been serving “bills house saké,” developed with Sumikawa Shuzojo, the brewery behind “Toyo Bijin,” as our main supplier.

This season’s lineup includes a new drink menu based on that house saké, as well as a dessert made using “saké kasu” (saké lees) produced during the saké brewing process!

◾️ Jasmine Saké Highball

A new drink featuring “bills house saké,” loved at bills locations worldwide, has arrived! The “Jasmine Saké Highball,” which mixes bourbon with a “homemade jasmine coconut base,” is now on sale.

This drink is already very popular at our Australian locations. It offers a refreshing taste with the fruitiness of coconut, yuzu, and green apple.

◾️ Apple and Almond Saké Kasu Galette

We also have a dessert menu perfect for cafe time or after a meal.

The “Apple and Almond Saké Kasu Galette” is baked with an apple filling prepared with lemon and cinnamon. 🍎 Furthermore, the crème fraîche is mixed with “saké kasu,” which is often discarded!

You can enjoy the crispy texture of the galette along with the light and airy crème fraîche.

The saké kasu used is sourced from Sumikawa Shuzojo and is a bills Japan exclusive. Please do not miss this opportunity.
