At bills, the all-day dining brand from Sydney, Australia, operated by SUNNY SIDE UP GROUP, the “AUTUMN&WINTER 2025 MENU” has been available since October 28 ✨
This autumn/winter’s new menu theme is “bills Origin – A Colorful Australian Table –.”

While returning to the brand’s roots—Sydney’s “simple, warm table”—this lineup lets you enjoy Australia’s multicultural spirit and diverse ingredient pairings.
From foods that freely incorporate inspirations from around the world to drinks that evoke the local fitness and café culture, a casual and healthy dining experience awaits 🇦🇺
Roast Pumpkin – house-made spiced oil, citrus yogurt, Job’s tears

A bills-style salad bowl inspired by the beloved “yogurt × pumpkin” pairing found in the Mediterranean and Middle East 🎃
The seasonal Ebisu pumpkin and house-made citrus yogurt create an exquisite balance of mellow sweetness and refreshing tang. Greens with watercress and parsley are finished with house-made “spiced oil” made with sunflower and pumpkin seeds, and topped with Job’s tears.
The creamy pumpkin layered with the toasty aroma of spices lets sweetness, acidity, and spice bloom with every bite—an ideal dish for autumn.
Mushroom Dumplings – fermented black beans, white soy dressing, coriander

A small plate that expresses bills’ take on “French × Chinese.”
House-made dumplings with brown mushrooms, shiitake, water chestnuts, and garlic chives feature a filling inspired by duxelles, with Shaoxing wine and sesame oil adding depth.
Finished with a house-made “white soy dressing” blended with Zhenjiang black vinegar, plus Korean spice gochugaru and coriander. Light in appearance yet full of cross-cultural harmony—an unmistakably bills dish ⭐️
Grilled Chicken Salad – radicchio, endive, persimmon, Chinese vinegar dressing

Chicken marinated with house-made five-spice, Shaoxing wine, and fish sauce is grilled to a savory finish. Paired with radicchio, red chicory, and sliced persimmon, the salad’s autumn/winter-inspired red tones add warmth to the table 🍁
To finish, it is paired with a house-made “Chinese vinegar dressing” using Zhenjiang black vinegar, and topped with buckwheat groats for extra nuttiness. Deep yet light, it is recommended not only as a salad but also paired with beer or sake 🍺
Orecchiette – house-made XO sauce, ricotta, capers, Kalamata olives

A dish that pairs short pasta orecchiette with a house-made plant-based “XO sauce,” finished with aromatic shiitake and other ingredients.
Inspired by Southern Italian home cooking, it is topped with sourdough bread crumble instead of Parmesan, adding a light, toasty note.
The gentle aroma of katsuobushi (bonito flakes) wafts through, while lemon zest and basil add a refreshing finish. The saltiness of olives and capers provides an accent—an unmistakably bills pasta plate where Japanese, Italian, and Asian essences come together 🍝
Choux Croquant – citrus cream, fennel seeds

The French baked sweet “croquant,” lightly reimagined with bills’ sensibility.
By baking a dough that incorporates the classic European pairing of “orange × fennel” to a fragrant crisp, a fresh citrus aroma blooms from the very first bite.
Inside is a generous filling of house-made “citrus cream.” A subtle fennel-seed spice adds an accent, leaving a crisp finish amid the sweetness. A perfect sweet for an afternoon break with coffee or tea 😋
bills Sake Cucumber – bills house sake, gin, cucumber, makrut lime, lemongrass

This autumn/winter at bills, drinks that capture Australia’s diverse culture are available—from cocktails to non-alcoholic options!
Based on “bills house sake,” the “bills Sake Cucumber,” blended with cucumber, lime, and house-made Thai syrup, is an elegant glass where herbal notes and the umami of sake come together in harmony.
The highly popular fermented drink “Pineapple Shrub,” a favorite since the previous season, offers a pleasantly spiced tropical tang that can be enjoyed both before and after a meal.
The “Mandarin Tarragon Soda,” made with house-made syrup, delivers a clean, refreshing taste with bright citrus acidity and the aroma of tarragon ✨
