Just as the long winter has passed, a season of sudden, gentle warmth has arrived.
bills, the all-day dining concept from Sydney, Australia, operated by SUNNY SIDE UP GROUP, began offering its “SPRING/SUMMER 2025 MENU” on April 22.✨
The theme of this new menu is Mediterranean Comfort Food.🌞
During the sun-drenched summer months, people living along the Mediterranean coast gather at beachfront restaurants and terraces to enjoy meals with wine or cocktails in hand, feeling the pleasant sea breeze.
Dining is not merely “nutritional replenishment,” but a “time to enrich one’s life,” adding color to precious moments spent with family and friends.
Inspired by this Mediterranean coastal culture, the new Spring/Summer menu features a lineup of refreshing and health-conscious dishes that maximize the natural flavors of the ingredients.

We recently attended a media tasting event ahead of the launch, so we would like to introduce the details along with a report on the atmosphere.✨

The globally trending fermented drink “shrub” now features a tropical pineapple flavor reminiscent of the warm season. Ripe pineapple is fermented for four days with brown sugar, cinnamon sticks, and pink pepper, resulting in a refreshing yet deep flavor.Finished with apple cider vinegar and mixed with fresh lemon juice and soda, it has a light aftertaste. It is recommended as an aperitif or a palate cleanser.

A new type of cocktail combining “bills house sake,” crafted by the Sumikawa Sake Brewery (known for “Toyo Bijin”), with seasonal fruit. Inspired by the “Rossini” cocktail originating in Venice, Italy, this is a uniquely bills alcoholic beverage that fuses Japanese and Western essences. The fresh, sweet-and-sour strawberries and the mellow sweetness of the sake are perfectly matched by the elegant accent of sparkling tea. It offers a light and sophisticated flavor that even those new to alcohol can enjoy.🍸

The summer breakfast bowl, popular since the opening of the first Sydney location, “bills Darlinghurst,” has arrived in Japan for the first time. This Asian rice pudding, loved for many years in Australia, has been reimagined in the bills style. Black glutinous Thai rice cooked with sweet and fragrant pandan leaves is topped with coconut milk and papaya, creating an impressively gentle and comforting flavor.

The popular summer small plate “Roast Pork and Watermelon Salad” returns as a revival menu item. The juicy pork and the sweetness of the watermelon are accented by coriander and ginger, creating a refreshing summer taste. The sweet and savory flavor, familiar to the Japanese palate, pairs perfectly with a crisp cold beer or kombucha. This is a dish best enjoyed on a terrace.

Bowl gourmet allows for efficient nutrient intake by arranging a variety of ingredients in a single dish. This highly nutritious salad bowl features puy lentils, a staple in European households. Based on green lentils, it is topped with roasted candy beets, pickled golden beets, baby spinach, and ricotta cheese marinated in olive oil. The finishing touch of house-made “gremolata” adds an even more refreshing aroma. This dish allows you to experience vegetables and ingredients that are difficult to prepare at home. A “Tarte Tatin” baked with a layer of caramelized pineapple is topped with chilled house-made “coconut semi freddo.” The semi freddo is made with toasted coconut flakes, coconut cream, condensed milk, and double cream, resulting in a rich and creamy melt-in-the-mouth texture. The pairing with the warm Tarte Tatin is exquisite, and the slightly bitter caramelization enhances the sophisticated, deep flavor, making it a dish that can be enjoyed by everyone from children to adults.🍨
Experience Mediterranean comfort food at bills locations nationwide
At the tasting event, dishes were served in special small portions so that we could enjoy many items. Despite this, every plate was so delicious that I couldn’t help but think, “I want to eat the full size!” Surrounded by simple and refreshing dishes that evoked the breeze of the Mediterranean coast, I found both my stomach and heart completely satisfied before I knew it.

With soft sunlight streaming in, “bills Ginza” was bustling with multinational guests, making me feel as if I were in a restaurant on the Mediterranean.
As we head toward the upcoming season of bright sunshine, the menu is full of items that will recharge your energy.🌞 Please enjoy that “delicious travel feeling” at a bills near you.
