[Central Kitchen] Our annual Egg-on-Rice Day! This year, we tried making the ultimate TKG again!

After a hot summer, the season has arrived when the autumn breeze carries the sweet fragrance of fragrant olive blossoms. And this year again, the Central Kitchen held a TKG event in celebration of “Egg-on-Rice Day”!

What kind of ultimate egg-on-rice did we create this time? Let us take a look inside the Central Kitchen!

◼️2023: “Egg-on-Rice STATION” Opens!

[Central Kitchen] “Egg-on-Rice WEEK” Is Here! What is the ultimate egg-on-rice everyone is talking about?

Once again, members’ original “ultimate egg-on-rice” creations were born one after another! We are pleased to introduce what went into them✨

◼️Introducing the members whose dishes were chosen as the ultimate egg-on-rice!

🥚Eggs: Nagoya Cochin eggs @Kushida Poultry Farm

They are characterized by their beautiful cherry-pink shells. Compared with many other breeds, they lay fewer eggs, making them extremely rare. The yolk color is lighter, but that is because they are not fed unnecessary additives solely to adjust yolk color. In addition, because approximately 20 carefully selected types of feed are used, these special eggs have very little of the distinctive raw egg odor.

🌾Rice: Seiten no Hekireki @Aomori Rice Headquarters

“Seiten no Hekireki” is a firm rice with slightly larger grains. It has a moderate sheen and a soft whiteness. Even if kept warm for a while after cooking, it retains a pleasant firmness without becoming mushy. It is satisfying to eat, yet not too heavy. It has an excellent balance of stickiness and clean finish, with an elegant lingering sweetness. Truly, it is rice made for TKG!

We prepared 10 different soy sauces, each with its own distinct character—sure to satisfy even egg-on-rice enthusiasts!

TKG is commonly enjoyed with a dashi-based soy sauce, but using richer options such as tamari soy sauce also lets you fully enjoy the flavor of the soy sauce itself. This time, we tried a variety of soy sauces!

◼️Introducing the ultimate egg-on-rice dishes made by our members!

Among the 10 soy sauces were some with impactful names, such as “Tsuresoi” and “Shikkoku,” and we even saw a few members choosing their soy sauce based on the name alone👀

Personally, I am especially fond of the name “Shikkoku”!

While some members quickly chose one soy sauce and started adding toppings, others could not decide and mixed several while digging into their TKG—and some even selected soy sauce by aroma like a sommelier…!

Along with the best, most delicious TKG we made together, we also chatted with members who happened to be there—asking, “Which one will you choose?”—making it a refreshing break between work💭

◼️Introducing the top 3 most popular soy sauces!

This time, we conducted a survey to have members choose their “favorite soy sauce” from the 10 varieties!

We prepared a QR-code-based survey. After eating our fill, it was time for digital voting🗳️

Which soy sauce was chosen…?

Here are the results!

1st: Soy Sauce for Eggs (Chikusei City, Ibaraki Prefecture)
2nd: Shikkoku (Gifu City, Gifu Prefecture)
3rd (tie): Kunshi, Shiro Tamari, Hasamezu, For Egg-on-Rice, Ryotei Shirodashi

My favorite soy sauce came in a close 2nd…!
