If someone were to ask you what comes to mind when you think of “Nagoya’s famous gourmet food”? Your answer may be Miso katsu (pork cutlet), Ankake spaghetti, Miso nikomi udon, Chicken wings, Kishimen, hitsumabushi… etc.

Nagoya is full of delicious gourmet foods, and also has a long-established Japanese food culture that has originated in the castle town of the Owari Tokugawa family, such as by the famous families who made Japanese sweets that were offered to the Tokugawa family and catered meals that have been loved by the townspeople since the Edo period.

The three long-established brands that have inherited Nagoya’s culinary culture for approximately 400 years have combined their efforts to pass on Owari-Nagoya’s culinary culture from the past to the future by opening hōsa!

“hōsa” is a word which represents the area where it is located. The Atsuta Shrine was called Horai Palace, and the area between Atsuta and Nagoya Castle, which was a newly developed castle town to the left of Horai Palace, was also called “hōsa,” with Nagoya Castle also being called “hōsa castle. Now, let me introduce you to “hōsa” food hall!

What is “hōsa”, a new type of Japanese food hall where you can enjoy “innovative modern” space, cuisine, and Japanese sweets?

The Japanese food hall “hōsa” opened on March 18, 2022  in the Nagoya Noh Theater, near Nagoya Castle. It was a combined efforts of three brands: “Catering Restaurant Yaohiko Honten,” which has served as Nagoya’s kitchen since its establishment in the Edo period; “Confectionery Shop Kashou-hanakikyou,” which has roots in the confectionery business of the Owari Tokugawa family; and “Nagomusashi Nakamata,” which inherited the name of a fishing business founded in Miyajuku, Atsuta.

“Hōsa” is a “Shokuraku-do” that brings together three areas: “hōsa-tei” (private dining room), “hōsa” (Japanese food hall), and “hōsa select” (select store). In addition to authentic kaiseki cuisine prepared by Chef Chikazawa, a “master chef of Aichi,” the restaurant will also offer a new type of Nagoya soul food, Kishimen, proposed by a long-established restaurant in collaboration with Hoshigaoka seimenjyo. This new food spot also offers a wide variety of items such as “Wa-fternoon Tea (Japanese afternoon tea),” a beautiful seasonal Japanese confectionery displayed on a stand shaped like Nagoya Castle, and “Hon Warabi Mochi,” a type of rice cake kneaded to order by a craftsman. 

What’s on the menu that you’re interested in?  Introducing the variety of meals starting from Wa-fternoon Tea (Japanese afternoon tea) to authentic kaiseki cuisine by area.

Area 1: Private room kaiseki “Hōsatei

Hōsa-tei is composed of 7 private rooms and a 40-seat hall that can be reserved for private parties, where you can relax and take a break from the hustle of everyday life. All seats in the private kaiseki room “Hōsa-tei” are reservation only, and it is a space where you can enjoy authentic kaiseki cuisine in a relaxed atmosphere.

Chef Chikazawa, “master chef of Aichi,” presents a main dish of appetizers, sashimi, and grilled dishes, as well as a hot pot full season delicacies. Desserts are prepared by confectioner Kashou-hanakikyou.

Area 2: Japanese food hall “hōsa”

This is the food hall area where you can sit back and enjoy lunch and coffee. This is the space that best embodies the concept of hōsa, which links the food culture of Owari-Nagoya to the future, and is equipped with table and counter seating.

A collaboration of the soup stock made by shaving 100 bottles of dried bonito every morning, which Yaohiko is particular about, and the Kishimen from Hoshigaoka seimenjyo. Half-and-half with a bowl of rice topped with seafood is also recommended.

With the concept of “increase Nagomu (increase the harmony)”, artisans carefully bake each dorayaki one by one to create a completely new and blissful dorayaki with a new texture. Enjoy the new experience of fluffy and moist dorayaki freshly baked.

The concept of this store is “a select store of food culture. It is a casual lifestyle concept centering on food. The lineup of products is based on the theme of “和(harmony),” and features the skills of Nagoya’s master craftsmen, as well as new styles and designs that are both traditional and innovative. We are not only offering food, but also lifestyles for the future with a variety of items that incorporate tradition and innovation. Not only traditional and famous products from Owari-Nagoya, but also from all over Japan. These items are also available as new souvenirs from Nagoya.

1) Famous manager!

The manager of hōsa is 20 years old! she is also an employee of Hana Kikyo, and was selected for the position after presenting his challenging attitude and language skills within Hana Kikyo. We are overwhelmed by his devotion to customer service and his enthusiasm.

Manager Hisano has always been interested in Japanese culture, collecting Japanese patterned accessories, taking pictures in kimono, and working part-time at a Japanese restaurant. This interest remained unchanged, and when she thought about working as an employee, she came across Hana Kikyo and decided to join the company.

She states that she wanted to spread the new Japanese culture to customers not only from all over Japan but also from all over the world! She is very enthusiastic about spreading the new Japanese culture to customers not only from all over Japan but also from all over the world. I hope you will enjoy the food, sweets, and space where the three brands are all long-established and yet challenge themselves to create new expressions,” said Hisano. 

2) The menu changes with the seasons.

Starting with the signature “Wa-fternoon Tea (Japanese afternoon tea),” the menu at hōsa changes with the seasons. According to the artisan, wagashi in particular is something to be savored with all five senses, so the menu is designed so that the taste, as well as the appearance, aroma, and sound of the sweets when eaten, and the touch of the sweets (spoon, chopsticks, etc.) will give enrich all of your senses. I actually had the spring version of the “Wa-fternoon Tea (Japanese afternoon tea),” and I was fully able to taste and sense the feeling of spring! <As of May, the Wa-fternoon Tea (Japanese afternoon tea)is now available in the summer version!>

Incidentally, the “Wa-fternoon Tea (Japanese afternoon tea)” was developed over a period of six months, and there are other specialties as well! The concept was to be simple yet impactful, elegant yet casual, and the stand was designed in the shape of Nagoya Castle to which is also the logo of hōsa.

The stand is made of beautiful cypress, the actual material used to form the Honmaru Palace of Nagoya Castle! We hope you will experience the “Nun-Katsu(Activities to enjoy afternoon tea)” with this “Good look”Wa-fternoon Tea (Japanese afternoon tea)!

3) Lovely Japanese modern interior

The interior of the restaurant is a very calm and modern Japanese-style space. In the daytime, the sun shines through the glass and provides a feeling of enchantment. In addition to table seating, there is also counter seating equipped with electrical outlets, so it can be used for situations such as working alone.

4) “Fuwafuwa Wanuki” demonstration counter!

hōsa has a “demonstration space” where the famous “Fuwafuwa Wanuki” is baked in the restaurant.

You can enjoy freshly baked “Fuwafuwa Wanuki” hot! I actually had some myself, and the texture was just like a soufflé pancake! It’s a dorayaki that overturns the conventional concept of dorayaki! The red bean paste and butter are a perfect match! It’s a must-try!

Founded approximately 300 years ago in the Edo period (1603-1867), Yaohiko-honten was established as a fruit and vegetable shop and pickle shop in Nishirokku under Nagoya Castle. We have not changed our traditional feelings, and we serve 5,000 meals every day as Nagoya’s kitchen. This is the second store we have opened following Tokugawa bijutsukan Nihon ryouri Houzentei(Houzentei is the Tokugawa Art Museum).
