The cold winter has passed, and the warm spring has come again this year! 🌸

“bills,” an all-day dining restaurant from Sydney, Australia, operated by SUNNY SIDE UP GROUP, is loved by customers all around the world. We are celebrating its 15th anniversary in Japan this March! 🥑

The past few years were difficult to attract customers from overseas due to the spread of COVID-19, but it has gradually returned with the easing of immigration restriction at the end of last year!

In order to further promote the appeal of “bills” to customers around the world, we held a tasting event of our foreign-customer-favorite menus for the inbound press! 

The menu included some of the classics that have been a favorite at bills for many years, as well as the vegan, vegetarian, and pescatarian options that bills prides itself on🍽️

Now, let’s take a closer look at the menus that were actually served at the tasting!

GRAINS

bills vegan granola, coconut yoghurt and fruit compote|VEGAN ¥1,300

The homemade granola is carefully baked in the restaurant’s kitchen and served with refreshing coconut yogurt and fresh cherry fruit compote. The granola is baked with large, caramelized nuts that are crunchy and chewy, providing a healthy satiety. This breakfast is loved by many and is the pride and joy of bills!🥣

BAKERY

Toasted sourdough, avocado, lime and coriander|VEGAN ¥1,450(+poached egg ¥200)

A classic menu at bills that has been loved by customers around the world since the first store opened in 1993. Avocado toast is a globally trendy food, but actually, the New York Times and other international newspapers have reported that “bills was the first in the world to offer avocado toast!”

Flavorful sourdough toast, fresh whole avocado, and plenty of cilantro make this a classic bill’s menu item. A squeeze of lime gives this healthy breakfast a fresh flavor that enhances the creaminess of the avocado. It almost feels like eating a healthy salad!

BOWLS

Seasoned rice and sesame greens, crispy egg, furikake and plum tamarind chutney ¥1,500

Brown rice with fresh vegetables and homemade furikake toppings is the perfect morning plate. When you crack open the yellow yolk of the fried egg, a mellow flavor spreads throughout the plate. The bright red chutney made with plum tamarind adds an accent to the flavor. The cucumber and pickled yellow beets that come with also add a different flavor if you eat them together!

SALADS

Celeriac and ginger fritters, buckwheat, butter bean purée, yellow beetroot and harissa | VEGAN ¥1,900

Celery root, ginger, turmeric, coriander, and cumin are added to make this crispy fritter. Buckwheat seed and quinoa salad, with smooth, cream-free butter bean puree and fresh beets, create a warm, fall/winter-like vegan salad. The harissa adds the perfect spicy flavor to the fritters.

DRINKS

Yame green tea latte ¥900

This drink, which is not too sweet and has a strong matcha taste, is made from “Yame” tea, which can only be found in certain areas of Fukuoka. It is one of the items on the menu that Bill Granger, the owner himself, tasted and decided to adopt on the spot (I always order this when I come to bills!).

Also, be one of the first to try the “Cherry Blossom Soda/Gin” served at “Hanami at bills,” an event going on in all 8 bills stores in Japan where customers can enjoy cherry blossom-themed drinks while viewing the cherry blossoms! 🍷Try this special drink created by Bill Granger while experiencing the cherry blossom season in Japan.

Cherry Blossom Soda ¥900

This refreshing drink is made with homemade syrup of cherries, plums, and thyme, lemon juice, and soda. The bright red color will add a touch of color to your table.

Cherry Blossom Gin ¥1,200

This original cocktail is made with homemade syrup made from cherries, plums, and thyme, mixed with bill’s house gin “The Botanist” and “Toyo Bijin” sake from the Sumikawa Sake Brewery in Yamaguchi Prefecture. It is perfect for dinner.

For the second year, we have added more cherry blossoms than last year, transforming the store into an even more gorgeous hanami venue. We hope you will enjoy our dishes with gorgeous cherry blossoms and enjoy a memorable moment.

The day I visited “bills Ginza” for tasting, the restaurant was bustling with foreign customers since early morning. People were relaxing with food and drinks that integrated the fresh, international spirit that is distinctive of bills.
