It has started to feel noticeably cooler, and the season is beginning to take on an autumnal feel.

When you think of autumn, there is no shortage of seasonal pleasures such as reading and the arts. What kind of “autumn” do you enjoy? Personally, I live for “autumn appetites” and “sports in autumn.”

With that in mind, I would like to share some delicious and delightful information that is perfect for this season!

The “Nihonmono Store,” produced by Hidetoshi Nakata

In a journey around Japan that Mr. Nakata began in 2009, he has spent more than 10 years traveling across all 47 prefectures and visiting approximately 2,000 locations. Through his web media “Nihonmono,” he shares carefully selected information—such as local traditional industries and producers including farmers and sake breweries, as well as shrines and temples, scenic spots, and accommodation details—so that it can also be useful when you travel.

Last September, an e-commerce site, the “Nihonmono Store,” opened, where you can purchase carefully curated products, including “exceptional items” Mr. Nakata encountered on his travels, with experts and chefs from various fields serving as curators. In the sweets category, Masanori Maezono—also known as a pudding lover—has joined as well!

And starting in September, products from the popular yakiniku restaurant “Komiyama” in Nishi-Azabu, Tokyo, went on sale!

Enjoy meticulously selected A5-grade domestic wagyuKomiyama

Located in Nishi-Azabu, Tokyo, “Komiyama” is a yakiniku restaurant that serves A5-grade Japanese Black wagyu, carefully selected and purchased whole by the owner, Mr. Komiyama. The menu is offered only as an omakase course, and it is characterized by adjusting the seasoning and course contents to suit each guest’s preferences. Newly available for purchase on the “Nihonmono Store” from this popular restaurant are “Wagyu Chazuke” and “Wagyu Hoppe Dog.”

Served midway through the standard course is “Wagyu Chazuke,” made with slices of A5-grade female Japanese Black wagyu. The dashi that brings out the meat’s umami is a blend of soup made from wagyu shank and sinew and ago dashi (flying fish broth). By loosening the meat and eating it immediately after adding the dashi, you can enjoy the changing flavors—from rare to more fully cooked as the heat comes through.

And it is easy to prepare! Thaw the beef naturally, and warm the dashi in a pot after thawing. Then, once you have served rice into a bowl, add your preferred condiments, generously top with the beef, and simply pour over the piping-hot dashi! Adding wasabi or chopped scallions, for example, makes it even more enjoyable. It would be wonderful to be able to enjoy such a luxurious chazuke during time at home, would it not?

“Wagyu Hoppe Dog” is a limited menu item that is not served as part of the course and is available exclusively on the e-commerce site. It is made by slowly simmering premium wagyu cheek meat for over eight hours and wrapping it in a fluffy white steamed bun (gua bao). The tender meat that falls apart the moment it enters your mouth pairs perfectly with the soft, airy texture of the bun.

The cooking method is also extremely simple: just thaw and heat it in the microwave. Pour the included special sauce over the meat, and you can fully enjoy the restaurant’s flavors while staying at home. It is also ideal as a dish for unexpected guests or as a late-night snack when you are feeling a bit hungry.
